Story of Wine: The grapes were 60% whole bunch fermented.  All grapes were left to ferment naturally with one punch down performed daily. The wines underwent malolactic fermentation in barrel. The barrels were blended together after 9 months in old French oak barrels and bottled right after.  The cinsaut is bottled earlier than our other red wines to maintain the crunchy fruit vibrancy unique to cinsaut.  No enzymes or commercial yeast was used in making the wines.

Story of Wine: The parcels are vinified separately before being blended together just before bottling. Grapes are whole bunch pressed and left overnight to settle in stainless steel tanks.  The wine is the racked to 3rd fill 500 litre French oak the next morning.  The wine spent 10 months on its primary lees without any batonage.  No commercial yeast or enzymes were used during the winemaking process

Story of Wine: Harvested at various ripeness intervals and fermented in a combination of stainless steel tanks and concrete eggs. No oak used during fermentation or maturation. Roussanne and Grenache contribute richness and complexity to this blend, balancing the fruit forward notes from the Chenin Blanc. Kept on the lees for 9 months before settling, filtration and bottling.

Story of Wine:Viognier grapes were sourced from a single mountain side block in the Breedekloof. It is one of the highest sites in the Cape with vines at 700 metres above sea level. Yields are naturally low at around six tonnes per hectare. The grapes were whole-bunch pressed and fermented in 2 x 500-litre old French barrels and 1 x 300-litre 2nd fill barrel. The ferment started with wild yeast and was completed with cultured yeast.

Story of Wine: The Leeuwenkuil grapes were tank fermented using natural yeast and blended with a smaller portion of barrel-fermented wine from 37-old-vines from Welgegund Farm.

Story of Wine: Roussanne is grown by Willy Mostert on the south-eastern side of the Paardeberg. The vines are planted on decomposed granite soils. The grapes were hand-harvested riper than usual, whole-bunch pressed and fermented slowly with natural yeast. The wine spent 8 months in a 500 litre barrel, with daily stirring of the lees
